Cajun Night




We have gad beautiful fall weather today! Had the windows open, cleaned out flower beds, got some things ready for winter. So in the spirit of cooler weather.....

We decided to make Cajun shrimp and rice for dinner. I am so glad we did! 

We found this rice recipe online it's was pretty easy, mix and bake. Fine the recipe here.
Chris then sautéed shrimp in a skillet with butter and Cajun seasoning.

51 years young



Today marks what would have been my moms 51st birthday! 51 years, wow! It's been 19 years since I have had my sweet momma here with me. At this time each year, I take time to reflect on what I think she would be like and remember memories we created together. I wonder where life would have taken me, but don't stress that thought... I am the happiest girl in the world with the wonderful fulfilling life I have created. I thank God for everything wonderful in my life. I like to think she would be proud of the woman I have become and hope to feel her guidance as I continue this journey through life. 

I love you to God and back. 

Yummy and Healthy


Tonight I made this delicious dish! I cut a spaghetti squash in half, placed it face down and baked it at 350 degrees F for 45 minutes. I then pulled the inside out with a fork to get the strings and topped with a vegetable spaghetti sauce! Super easy and super yummy! 

I need easy on a night when my one year old doesn't feel good!

We're done.

Finally, my husband has reached a feeling of completeness. We have just finished canning our 4th and final batch of homemade salsa. This time he amped up the flavor with habanero peppers and extra of the others he used. 

We made a pretty good team. I washed and chopped tomatoes while he chopped everything else. I don't do onions or peppers! 


So glad it's over! 
 I know he will enjoy them in the months to come.

Hunting season 2014




To all wives who have a hunter for a husband... You will sympathize wit me. Bow hunting season opens in September in western Kentucky. That means alllll the prep work comes in August. So it's nonstop talk about hanging stands, scouting, looking at camera cards, and lots of time away from home. 

Chris has been so busy with our first rental property we purchased and his job, he hasn't had much time to get away. Today, he got to spend a little bit of time in the field.
