Cajun Night

We have gad beautiful fall weather today! Had the windows open, cleaned out flower beds, got some things ready for winter. So in the spirit of cooler weather.....

We decided to make Cajun shrimp and rice for dinner. I am so glad we did!

We found this rice recipe online it's was pretty easy, mix and bake. Fine the recipe here.
Chris then sautéed shrimp in a skillet with butter and Cajun seasoning.

If u like Cajun.... Try this!

51 years young

Today marks what would have been my moms 51st birthday! 51 years, wow! It's been 19 years since I have had my sweet momma here with me. At this time each year, I take time to reflect on what I think she would be like and remember memories we created together. I wonder where life would have taken me, but don't stress that thought... I am the happiest girl in the world with the wonderful fulfilling life I have created. I thank God for everything wonderful in my life. I like to think she would be proud of the woman I have become and hope to feel her guidance as I continue this journey through life.

I love you to God and back.

Yummy and Healthy

Tonight I made this delicious dish! I cut a spaghetti squash in half, placed it face down and baked it at 350 degrees F for 45 minutes. I then pulled the inside out with a fork to get the strings and topped with a vegetable spaghetti sauce! Super easy and super yummy!

I need easy on a night when my one year old doesn't feel good!

Try it! Let me know what you think!

We're done.

Finally, my husband has reached a feeling of completeness. We have just finished canning our 4th and final batch of homemade salsa. This time he amped up the flavor with habanero peppers and extra of the others he used.

We made a pretty good team. I washed and chopped tomatoes while he chopped everything else. I don't do onions or peppers!

So glad it's over!
I know he will enjoy them in the months to come.

Hunting season 2014

To all wives who have a hunter for a husband... You will sympathize wit me. Bow hunting season opens in September in western Kentucky. That means alllll the prep work comes in August. So it's nonstop talk about hanging stands, scouting, looking at camera cards, and lots of time away from home.

Chris has been so busy with our first rental property we purchased and his job, he hasn't had much time to get away. Today, he got to spend a little bit of time in the field.

Happy hunting!

Only 20-25 ft in the air. No big deal!

New school

My little Avery started a new toddler class 2 weeks ago now.
New class.
New building.
New teacher.
Friends she already knew!!!

Some of her friends moved before her, but since she is so far ahead of other kids her age,
They asked if I was ready to move her.... My response, uh, yeah!
I want Avery to have a challenge, she was ready for it!

I am so glad I moved her! She loves the other kids, the toys, and especially,
Recess!! 2x a day! Outside!
(That's better than candy to her!)

Here are some pictures of her when she met her new teacher.

Her day starts by checking under her bed for any misplaced buttons(pacifier).

Trying out her new chair.

Reading with her friend Max.

Gosh, those eyes... Stops me still every time!

Finally, meeting her new teacher, Ms. Shirley!

Waffles....

Chris has been on a crazy waffle kick....

No, not Ego waffles.....

Home made....everyday!

Cruise March 2014

Avery Went on her first cruise in March... This was my first cruise too! I absolutely loved it! Traveling with a 1 year old is not the most relaxing vacation you can have but it was certainly fun! We went on this trip with our family. It was a great time to visit and catch up! Here are some pictures of our trip.

Rotan, Honduras

My little water baby.

My family!

I am one lucky lady!

Avery's First time at the Ocean
(sand was NOT the most exciting thing that happened to her)

Rotan.....I could go there again! I loved this place!

Avery and her grandparents!!

Peek-A-Boo

Avery Now loves to play hide & seek.... Her version.... Hide in the pantry....

"If I can't see you, then, you can't see me."

Pure Innocence.

"Avery, put the can of food back in the pantry."

She hides.

"Where's Avery? There she is!"

Long time.... No post.....

It is quite embarrassing how long it has been since I last posted...
Not days or even weeks, but months.....

How does that happen... We'll I'll tell ya....

New baby, old job stress, new job transition, new baby turns one,
During this time I also became a teacher, no, not your usual school teacher or college professor,
but a teacher of many things.....

I have become familiar with the phrase: "little girls don't act like that," "are you hungry?,"
And our big headliner "go to your room if you are going to act like that."

When family and friends said "get ready parenting is wonderful and hard."
I took that to heart. I believed them. But as every new mom says "they were right...."
SURPRISE! You knew that was coming.

Avery is now getting to the age that her learning takes new turners every day. I am going to do better at sharing her comical learning points with you!

So, to get a feel for what you are going to be reading about let me describe what kind of little lady she is..... Very laid back. She can hang with the best of them when it comes to piling on the couch to veg out and watch tv, but not to be fooled. When it comes to watching a kids show, alone, forget it. Most of the time she rolls all over the place before getting comfortable.
At the end of the movie nonetheless.

She is the kind of girl who thinks you need a tissue because you are sneezing... Her solution, grab the end of the toilet paper in the bathroom and unroll it till she either runs out or makes it to you.
Thoughtful. I know. A mess, oh yes!

I also plan to share things I am baking... making.... and just plain find interesting....

I think I will call this my "Re-introduction to spilling my guts blog." Yes. I think that will work...
